Paseo bidder said sandwich shop will soon reopen

SEATTLE — The man who out bid six others for Paseo, the popular Seattle sandwich shop, said it will soon be staffed again with the same food and formulas made by former Paseo workers.

However, former owner Lorenzo Lorenzo told the court the recipes are his personal property and only the business was for sale.

Paseo suddenly close in mid-November after the restaurant filed for bankruptcy. The restaurant, which had locations in Fremont and Ballard, had received rave reviews, including the No. 2 ranking on Yelp's top 100 places to eat in the United States. Paseo had been in Seattle since the 1990s.

The buyer, Ryan Santwire, was the top bidder when a trustee appointed by the courts auctioned it off on Friday. He is paying $91,000 for the sandwich shop, including the Fremont shop's equipment, the Ballard location and the name.

Santwire told KIRO 7 reporter Linzi Sheldon that employees made the marinades for year and that the formulas don't belong to Lorenzo. Santwire said he'd explain more after a judge approves the sale on Friday, Dec. 12.
